  8. 1 tbsp. fresh thyme leaves
  9. 2 and 1/4 tsp. salt

  11. 1 and 1/2 quarts of water or beef broth
  12. 1/4 cup brown rice
  13. 2 cups diced potatoes
  14. 1/2 cup diced carrots

  18. 1 cup Julian green beans
  19. 1 cup cooked green peas
  20. 2 cups green Swiss chard cut into small pieces

  1. Heat a top stove griddle
    Roast the steaks on both sides and let cool off.
  2. Cut the beef into thin strips
  3. Heat a deep pot with oil and sauté the garlic with the onions.
  4. Add and brown the meat until it loses the pink color.
  5. Add the cumin, paprika, oregano, thyme, salt, pepper and cook for a few seconds without burning.
  6. Add the rice with 1 quart of boiling water and cook it for 10 minutes with the pot covered.
  7. Add the rest of the vegetables except peas and Swiss green chard.
  8. Add the remaining 1/2 quart of boiling water, cover the pot and over moderate heat cook for about 15 minutes without overcooking the vegetables.
  9. Add the peas, green Swiss chard and cook for 5 more minutes. Turn off the heat and let it rest for a few minutes before serving.
  10. Once the soup is served, sprinkle with cilantro and sliced scallions on top.
